Homemade Sweet & Sour Chicken Stir Fry

✔ Whole Bagged Chicken
✔ Asparagus
✔ White Mushrooms
✔ Dole Light Pineapple Juice
✔ Minute Rice

🍽 Serves 4-6

✨ INGREDIENTS:
• 2 chicken thighs and 2 chicken breasts (or whatever you want to take off the whole chicken)
• 1 bunch asparagus, trimmed
• 1 cup white mushrooms, sliced
• 2 cups cooked rice
• 1 tbsp olive oil

FOR THE SAUCE

• 1 cup of pineapple juice
• 4 tbsp low-sodium soy sauce
• 2 tbsp honey

• 3 cloves garlic, minced
• 1 tsp fresh ginger, grated (optional)
• 1 tsp cornstarch mixed with 2 tbsp water (or more to reach the desired thickness)

👩‍🍳 DIRECTIONS:

1️⃣ Cut your whole chicken up in desired pieces.

2️⃣ Pat chicken dry and season lightly with salt and pepper. Place in a frying pan over medium heat.

3️⃣ Fry chicken until lightly cooked

4️⃣ While chicken cooks, whisk together pineapple juice, soy sauce, honey, vinegar, garlic, ginger, and cornstarch slurry in a bowl. 

5️⃣ Add your chopped up veggies to your chicken and cook until desired consistency.

6️⃣ Add your sauce to the pan and cook until it has thickened up.

7️⃣ Serve over fluffy rice.
