Instructions

1. Make the Turnip Biscuits

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Boil the cubed turnips in salted water for 15–20 minutes, until fork tender.
  3. Drain very well. Return the turnips to the hot pot for about a minute to allow excess moisture to evaporate. Mash until smooth—you should have about 1 cup of mashed turnip.
  4. In a large bowl, whisk together the cottage cheese and eggs until mostly smooth.
  5. Stir in:
    • almond flour
    • 1 cup cheddar cheese
    • chives
    • baking powder
    • garlic powder
    • salt and pepper
  6. Fold in the warm mashed turnips.
  7. Scoop approximately ¼ cup portions onto the baking sheet to make 8 biscuits.
  8. Sprinkle the remaining cheddar over each biscuit.
  9. Bake for 22–25 minutes, until golden brown and firm.

2. Cook the Steak Bites

While the biscuits bake:

  1. Pat the steak cubes completely dry with paper towel.
  2. Toss with:
    • garlic
    • salt
    • black pepper
  3. Heat a large cast iron skillet over high heat until very hot.
  4. Add the steak in a single layer (cook in batches if necessary). Sear for 1–2 minutes without moving.
  5. Flip and cook another 1–2 minutes until browned but still juicy.
  6. Reduce heat to medium.
  7. Mix together
    • Cajun seasoning
    • smoked paprika
    • garlic powder
    • onion powder
    • butter
    • garlic cloves
    • parsley
    • lemon juice
. Stir continuously for about 1 minute, spooning the melted garlic butter over the steak.
  8. Finish with chopped parsley and a squeeze of lemon juice if desired.

To Serve

Place two warm cheddar turnip biscuits on each plate and top with a generous helping of Cajun Butter Steak Bites. Spoon any extra garlic butter from the skillet over the steak and biscuits.

For a little freshness, garnish with extra chives or parsley.
