Cajun Butter Steak Bites & Turnip Cheddar Biscuits
Ingredients
For the Turnip Cheddar Biscuits
- 2 cups peeled and cubed turnips
- 1 cup full-fat (4%) cottage cheese
- 2 large eggs
- ¾ cup almond flour
- 1½ cups shredded sharp cheddar cheese, divided
- 2 tbsp chopped chives
- 1 tsp baking powder
- ½ tsp garlic powder
- Salt and pepper, to taste
For the Cajun Butter Steak Bites
- 1½ lbs striploin steak, cut into 1-inch cubes
- 1 tbsp avocado or olive oil
- 2 tsp Cajun seasoning
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- Fresh cracked black pepper
- 3 tbsp butter
- 3 cloves garlic, minced
- 1 tbsp chopped fresh parsley
- 1 tsp lemon juice (optional, for brightness)
Instructions
1. Make the Turnip Biscuits
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Boil the cubed turnips in salted water for 15–20 minutes, until fork tender.
- Drain very well. Return the turnips to the hot pot for about a minute to allow excess moisture to evaporate. Mash until smooth—you should have about 1 cup of mashed turnip.
- In a large bowl, whisk together the cottage cheese and eggs until mostly smooth.
- Stir in:
- almond flour
- 1 cup cheddar cheese
- chives
- baking powder
- garlic powder
- salt and pepper
- Fold in the warm mashed turnips.
- Scoop approximately ¼ cup portions onto the baking sheet to make 8 biscuits.
- Sprinkle the remaining cheddar over each biscuit.
- Bake for 22–25 minutes, until golden brown and firm.
2. Cook the Steak Bites
While the biscuits bake:
- Pat the steak cubes completely dry with paper towel.
- Toss with:
- garlic
- salt
- black pepper
- Heat a large cast iron skillet over high heat until very hot.
- Add the steak in a single layer (cook in batches if necessary). Sear for 1–2 minutes without moving.
- Flip and cook another 1–2 minutes until browned but still juicy.
- Reduce heat to medium.
- Mix together
- Cajun seasoning
- smoked paprika
- garlic powder
- onion powder
- butter
- garlic cloves
- parsley
- lemon juice
- Finish with chopped parsley and a squeeze of lemon juice if desired.
To Serve
Place two warm cheddar turnip biscuits on each plate and top with a generous helping of Cajun Butter Steak Bites. Spoon any extra garlic butter from the skillet over the steak and biscuits.
For a little freshness, garnish with extra chives or parsley.
