Glazed Ham & Mashed Potato Crusted Mozzarella Sticks
🍯 Syrup & Brown Sugar Glazed Smoked Ham

Ingredients

1 fully cooked smoked 1/2 ham (2–3 lbs)

1/2 cup brown sugar (packed)

1/4 cup maple syrup

1 tablespoons Dijon mustard
Instructions
1. Prep the Ham
Preheat oven to 325°F (165°C).
Place ham cut-side down in a roasting pan. Cover loosely with foil.
Bake for about 15 minutes per pound, until heated through.
2. Make the Glaze
In a small bowl combine:

Brown sugar

Maple syrup
-
Dijon mustard
3. Glaze & Caramelize
Remove foil during the last 30 minutes of baking.
Brush generously with glaze and return to oven uncovered.
For extra caramelization, broil for 2–3 minutes at the end. Watch carefully — sugar moves fast.
Let rest 10–15 minutes before slicing.
Result? Sweet, sticky edges and juicy smoky slices.

4–5 medium red potatoes

1–2 tablespoons cornstarch

Black Diamond cheese strings (cut in half)

Instructions
1. Boil the Potatoes
Peel if desired and cut into chunks.
Boil in salted water until fork-tender.
Drain very well.
2. Mash & Cool
Mash until smooth, and add your typical mashed potato ingredients
While still warm, mix in 1–2 tablespoons cornstarch.
The mixture should be thick and moldable — not loose.
Let cool completely. Refrigerating for 30–60 minutes makes shaping easier.
3. Wrap the Cheese
Cut cheese sticks in half.
Flatten a scoop of cooled mashed potato in your palm.
Place half a cheese stick in the center.
Wrap and seal tightly, especially the ends.
Roll into small logs.
If soft, freeze 20–30 minutes before frying.
4. Deep Fry
Heat oil to 350°F (175°C).
Fry for 2–3 minutes until golden brown.
Remove and drain on paper towel.
Let rest 1–2 minutes before serving — molten cheese warning applies.
