Beef French Onion Soup
🥣 Slow-Simmered Beef French Onion Soup
🛒 Ingredients

2–3 lbs inside round roast
-
2 Knorr Onion Soup Mix Packages
-
4 packets of OXO Beef Bouillon
-
4 large onions, thinly sliced
-
2 cups mushrooms, sliced
-
2 cloves garlic, minced
-
10 cups cold water
-
1 tbsp butter or oil
-
Salt & pepper to taste
-
Optional: splash of balsamic vinegar
🔥 Instructions
1️⃣ Sear the Roast

Season roast with salt & pepper.

In a heavy pot or Dutch oven, heat oil over medium-high.

Sear roast 3–4 minutes per side until browned.

Remove and set aside.
2️⃣ Build the Flavor Base

In the same pot, add oil
-
Add onions and cook 5–7 minutes until softened and slightly golden.

Add mushrooms and cook until browned.

Stir in garlic for 30 seconds.
3️⃣ Soup Magic
-
Add beef broth + water.
-
Whisk in Knorr packet(s).
-
Return roast to pot.
4️⃣ Simmer Low & Slow

Cover and simmer on low 2–3 hours (or until fork tender).

OR crockpot on low 6–8 hours.

5️⃣ Finish
-
Remove roast and shred thinly.
-
Return beef to pot.
- Add rice if required
-
Taste and adjust seasoning.

Tiny splash balsamic if it needs depth.
