Air Fryer Roast Beef with Roasted Boursin Pasta


Ingredients


For the Beef:

  • 1 small beef cross rib roast (2–3 lbs)

  • 2 tsp olive oil

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp dried thyme

  • Salt and black pepper, to taste


For the Pasta:

  • 340 g (12 oz) short pasta (penne, rigatoni, or fusilli)

  • 1 package (150 g) Boursin cheese (garlic & fine herb)

  • 1 pint grape tomatoes

  • 1 small red onion, thinly sliced

  • 2 tbsp olive oil

  • Salt and pepper, to taste

  • 1/2 cup grated Parmesan cheese (optional)

  • 2 cups fresh spinach (optional)

Instructions


Roast the Beef:

  1. Preheat air fryer to 390°F.

  2. Pat roast dry and rub with olive oil, garlic powder, onion powder, thyme, salt, and pepper.

  3. Air fry for 15 minutes, then lower temp to 325°F and cook until internal temp is 135°F for medium-rare.

  4. Remove, tent with foil, and rest 10 minutes before slicing.


Roast the Veggies & Boursin:

  1. Preheat oven to 400°F.

  2. In a baking dish, toss grape tomatoes and sliced red onion with olive oil, salt, and pepper. Nestle the Boursin cheese in the center.

  3. Roast for 20–25 minutes, until the tomatoes burst and the cheese is soft and melty.


Cook the Pasta & Combine:

  1. Meanwhile, cook pasta in salted water until al dente. Reserve 1 cup pasta water, then drain.

  2. Stir roasted veggies and melted Boursin into the pasta, loosening with reserved pasta water as needed for a creamy coating.

  3. Add spinach (if using) and Parmesan, stirring until just wilted.


To Serve:

  • Divide the pasta among plates and top with slices of juicy air-fried roast beef.

  • Finish with extra Parmesan and cracked pepper.
