Recipe of the week, February 2nd: Turkey Tacos
1/2 lb ground turkey
1 small onion, chopped
1 tablespoon vegetable oil
1 can (10 oz) black bean or kidney beans
2/3 cup salsa
8 taco shells
Garnish: Chopped avocado, chopped tomato, shredded cheese, shredded lettuce
Saute turkey and onion in oil in a large skillet until lightly browned, about 5 minutes, stirring to break up clumps. Drain and rinse beans. push turkey to one side of the skillet and add beans. Mash 1/3 of the beans with a fork. Stir in half of the salsa. Heat until hot.
To serve, divide mixture into the taco shells. Serve with the remaining salsa and the garnishes.
