Recipe of the Week, January 19th: Pizza Potatoes
2 boxes scalloped potatoes
1 can pizza sauce
4 oz sliced pepperoni (125g)
1 medium onion, finely chopped
1 cup shredded mozzarella
Empty contents of boxed scalloped potatoes into a casserole dish.
In a sauce pan, heat together the pizza sauce, onion and the amount of water called for on the boxed scalloped potatoes. Bring to a boil and then pour over the top of the potatoes. Arrange pepperoni over the top and sprinkle with cheese.
Bake at 400° for 30 to 35 minutes or until potatoes are cooked.
Serve with a green salad.
